Menu Plan Monday

It's time for Menu Plan Monday again. Last week was a rough week for us so I didn't get anything else posted.  Be looking this week for more posts!  Did any of you try planning your menu for the week? How did it work? I hope you can take some of my recipe ideas and use them.   If you try a recipe and love it, share it with me (not the food, just the recipe!).  I would even consider featuring it on an upcoming Menu Plan Monday!

Here is what we are having for the week:

Monday: Potato Soup. I don't have a recipe for this, I just cook potato and onions, make my white sauce and pour it over cooked potatoes.  I was watching Tyler Florence on the Food Network a few weeks ago and he made corn chowder. He cooked the potatoes in the cream sauce, which I have never thought of! I will be giving this method a try on my soup tonight!.  Check out his corn chowder recipe here.

Tuesday: Black Bean Soup. This is another Food Network recipe. It is wonderful!  I usually cut it in half and it turns out great! Recipe is here.

Wednesday: Ham & Beans. Corn Bread. This is Brenden's favorite meal so I always double the recipe so there are leftovers. This is one of the few things he will actually eat leftover! This recipe is out of the Better Homes & Gardens Cookbook 10th Edition.  Sorry, I cant find the recipe online. I am sure the recipe is the same in all editions. If you don't have this cookbook I recommend it. It is a great resource for simple home cooking.  The recipes are basic and can be altered very easily to work with picky eaters!

Thursday: Macaroni & Cheese with Ham.  This is an AWESOME recipe from Rachel Ray.  I have made homemade mac & cheese for several years, but this one tops them all so far!  It is a white sauce that does not have HIGHLY processed yellow cheeses in it!  It tastes great without the Ham, but we prefer the added taste of the Ham.  When I don't add the ham I usually make BBQ little-smokies to go with the Mac & Cheese. You can find the cheeses in the deli section of most grocery stores. Check the recipe out here.

Friday: Leftover Night.  Fridays make great leftover nights, especially when my week has been crazy at work and I'm too wiped out to cook!

  1. I love all the soup recipes you have!! We love our potato soup recipe -- it's a favorite in the fall. We'll have to put it on the menu next week :)

  2. I am glad you enjoyed all the soup recipes. I love this time of year because I can start cooking warm, hearty food! Come back next week, who knows what I might be cooking!

  3. Hmmmm....Tuesday and Wednesday, beans and beans. I think Beano is in order! These all sound delicious. We just had potato soup Grandma's way (no white sauce, just potatoes, milk, butter, salt, pepper, yum) at Grandpa Chet's house. Then had our style potato soup when I came home to Winfield. Can't get too much potato soup! Thanks for posting these good menu ideas. I need all the help I can get figuring out what to fix!
