Monday: Out to Eat. Had to go get grass fed beef and eggs at local health food store off post. They close at 6 so I always have to go as soon as I get off work.
Tuesday:Sloppy Joes, Salad, Watermelon.
Wednesday: Beef & Black Bean Taco Bake, Salad, Watermelon.
Thursday: Sausage Quiche, Cantaloupe (from CSA box this week). Quiche recipe to follow later this week.
Friday: Macaroni and Cheese with Ham, cucumbers (from CSA box this week), whatever fruit we still have in house
Saturday: Grilled Chicken, veggies and fruits (whatever we have in the house still)
Breakfast will be oatmeal and smoothies. Lunches will consist of leftovers. Snacks include oranges, cucumbers, pistachios, and who knows what else.
B requested I make this cookie recipe this week. I hope to have time tomorrow evening to make them.
The other items in our CSA box this week include eggplant and okra. So I need to figure out how to incorporate those into our menu. I may have to move one of the dinners to next week to use the okra and eggplant. If you have any good recipes for these veggies let me know!

ReplyDeleteWe've been getting CSA this summer too, through my job. It's wonderful, but sometimes hard to figure out what to do with everything.
I'm a big fan of thin slices of fried egglant, it's not the healthiest thing ever, but it prevents the tendency for textural issues.
This is really nice, especially when paired with pasta.
I'm not sure if you make your own noodles or not, but I totally recommend it. It will change your life and my husband says it's really easy...
We pickle our okra, we have a 'mother' that we add to.
We've been gardening a bit this summer too, and our okra were our suprise crop. It was covered in mites and appeared to be dead, so I cut it back and fertilized and amazingly the stuff bounced back and now it's massive and producing like crazy. Plants amaze me.
