Menu Plan Monday 9.26.11

I am back with Menu Plan Monday!  I have been MIA for the past week or so because my living room has been full of decorating projects. It was my main focus after dinner every night to finish up the many projects I had going and get everything hung on our walls. I will post pictures later this week of our decorated home so you can see what I have been busy with the last two weeks.

I am participating in a challenge hosted by Keeper of the Home.  This is the first official week of the Plan It-Don't Panic Challenge.  This is a six week challenge to start menu planning (if you are not already) and to hold others accountable to planning  and following through on weekly menus and.  I already plan our menus on a weekly basis, but that does not mean I am perfect at following through on my planned menus!  I am always amazed at the people that can actually get away with not planning a menu and can get dinner on the table.  If I did not plan we would eat out way to much!

I am participating in this challenge because I struggle with breakfast, lunch, and snack plans.  I have become much more aware of what and how much I eat since working with my personal trainer.  She has me keep a food journal and reviews it every once in awhile.  My problem areas consist of not eating breakfast, not eating enough protein, and not eating enough food overall throughout the day.  I am really trying to work on these areas and hope this challenge will keep me accountable to these struggles.

I am currently working on an inventory for my freezer, spice cabinet, and pantry.  I will be discussing these further in the weeks ahead.  Do you know what is in your pantry and freezer?  Do you have an inventory for your pantry or freezer?  Are you interested in learning how I am doing this, the benefits of having an inventory, and how to keep it organized? I am also working on one of the baby steps on our real food journey--using dried beans instead of canned beans.  I'm excited to share with you more details on this and much more!

  1. I am pleasantly surprised to find another person planning out snack time like we do. I also have an issue with not eating enough in the morning (though I feed my daughter) then at 10:00 at night my husbands laughing at me because I am starving. I blame too many years of working retail and having a funky schedule.
