It is that time of week again...Menu Plan Monday which is actually being hosted over at Finding Joy in My Kitchen this week! I'm in transition right now amending when I sit down to plan my menu and buy groceries...but more on that another day.
Sunday: Vegetable Soup. This is a great recipe to use up veggies that need to be used and might be nearing expiration! I don't really have a recipe for this, so here is a quick summary of how I make it.
Put a few TBSP of butter in pot. Add onions and celery. Saute for a few minutes. Add chopped carrots, potatoes, red or green peppers, and any other veggies that take awhile to cook. Add water, enough to cover veggies. Add a variety of spices that you would like. I usually lean towards Italian type seasonings. This batch I added Italian seasoning and 1 garlic clove chopped. Add can of diced tomatoes, tomato sauce or juice (whichever one you have on hand). Let it cook for 5 minutes. Add any other veggies you have on hand that are more tender and do not require much time to cook. I added squash, fresh green beans, corn to this batch. Cook for 10 minutes or so till veggies are tender.
Monday: Leftover Soup. Brenden had a very healthy dinner, grilled hot dogs, since he wont eat veggies.
Tuesday: Taco Salad
Wednesday: Chicken Nuggets. Tossed Salad.
Thursday: Chicken Skewers
Friday: Homemade Pizza. We are putting pepperoni, ham, and bacon on our pizza. Tossed Salad.
