Coconut oil is solid at room temperature and will turn into a liquid around 78 degrees Fahrenheit. So when you purchase coconut oil don't worry that it is not in a liquid form. Coconut oil can be heated (to a point) without harming the nutritional value of the oil. It does have a smoke point, but it is much higher then other common cooking oils. So this makes it a great oil to use in cooking and baking!

There are so many uses for coconut oil. You can cook and bake with it as well as use it in the bathroom. Yes, in the bathroom. It is a great moisturizer and can be used in many homemade beauty products. I use it as both my body and facial moisturizer. A little goes A.LONG.WAY so it is a very cost effective beauty product. I will talk more about including coconut oil in your beauty regime in a post next week.
Today I will be sharing with you a fabulous & easy recipe using Tropical Traditions Virgin Coconut Oil. Since we have been on a very restricted diet this past month we have not been able to eat potato chips and I have missed having something crunchy and salty to eat. Well I found a great substitute--Baked Sweet Potato Chips!
First, you want to soak your sweet potato in produce wash and scrub it to remove the dirt. Next, thinly slice the sweet potato trying to make them all the same size slices. I use a mandoline to make the job easier!
Melt 2 TBSP Tropical Traditions Virgin Coconut Oil on the stove over low heat. I use a little fun pot made for melting butter which has a pour spout on it.
Let the oil cool a little while you mix the spices together. Add the oil to the spices. Then pour the oil/spice mixture over the sliced potatoes and mix to coat the potatoes.
Spread the potatoes in a single layer on a baking sheet.
Bake potatoes in 400 degree oven for 10 minutes. Then flip the potatoes over and bake for another 10-15 minutes. Make sure to watch the potatoes once you flip them. Baking times will vary depending on your oven. Just bake them until they are golden brown.
