Menu Plan Monday 7.16.12

Wow I had a busy weekend but it was great to have B around.  We enjoyed a Saturday night out and we ate way too much!  What did you do this weekend? 

This week I have a couple of repeat meals from last week since we ate out twice….oops! 

Monday: Sloppy Joes and veggies. No, I don’t use that nasty canned stuff. This recipe is WAY better then the highly processed canned junk.  I picked my first cucumber off the plant today and I'm super excited to try it tonight with dinner.  This is my first try at growing cucumbers and I'm not really sure how to tell if they are ready to be picked, I guess I need to google it to find out! 

Tuesday:  BBQ Chicken. Baked Sweet Potatoes. Fruit & Veggies

Wednesday: Ham & Beans. Cornbread (no cornbread for gluten free, which means no cornbread for me). Fruits & Veggies.

Thursday: Grilled Honey Lime Chicken. Fruits & Veggies.

Friday: Grilled Chicken & Vegetable Fajitas (gluten free tortillas).  I finally have a veggie grill basket so I’m excited to try it out.  Homemade Guacamole and Salsa....yummy! 

Saturday:  Leftovers or out to eat.

Sunday: Balsamic Glazed Chicken. Fruit & Veggies.

Since I’m working out a couple times a day I need to start eating breakfast in place of a protein smoothie.  So for breakfast this week I will be making eggs, veggies, and meat combinations.  B will be excited!  I will also eat soaked oatmeal a couple of mornings.  Are you thinking, “what is soaked oatmeal”?  I will share the recipe next week.

Have you noticed the annoying spaces in my posts recently?  So frustrating, I cant figure how to fix the problem.  If anyone has had this issue with blogger let me know how you fixed it!
