So I'll stop chatting and give you our menu for the week. I am including this past Friday-Sunday because I mentioned the Baked Southwest Egg-Rolls in the Life Lately post and wanted to give you that recipe.
Friday: Baked Southwest Egg-Rolls with Cilantro Cream Dressing. This was my last gluten & dairy splurge and it was SOOOO GOOOOD! I used up some gluten filled tortillas we had left, but these would have been good with GF tortillas or NO tortilla. I actually ate the filling on Saturday with no tortilla and loved it!
Saturday: Spaghetti & Meat Sauce with Gluten Free Noodles.
Sunday: Chicken & Noodle Soup with GF Noodles. B got sick with a head cold on Friday so this was our Easter meal! I was hoping for Cheeburger Cheeburger one last time this weekend before going off gluten completely, but he just didn't feel good enough to eat out this weekend. Oh well, I forgive him!
Monday: Leftover Chicken & Noodle Soup...oops, made to much!
Tuesday: Paleo Burger, Sweet Potato Fries w/ Avocado Lime Dip, Salad. No recipe for the Paleo Burger, basically I'm making hamburgers with no cheese (that will be tough!) and without the bun. Our bun will be a lettuce leaf. Topping hamburger with onions, avocado, tomato, and any other produce I might have in my fridge. The options are endless, add any sort of veggie toppings you want! I cant wait for the fried and avocado dip.
Wednesday: Spicy Paprika & Lime Grilled Chicken, Grilled Veggies, Rice
Thursday: 13 Bean Soup (crock-pot), Salad. The bean soup base is a 13 bean soup I get at our local health food store. I add different things every time I make the recipe. This week I will probably make it tomato based.
Friday: Jambalaya, Salad
Saturday: Leftovers. Garage sale day so I am not cooking!
Sunday: Garlic Mustard Grilled Chicken, Grilled Veggies, Rice, Salad
My snacks this week will be green apples, oranges, raw cookie dough balls, green bananas, and homemade kale chips. I hope to get the kale chips recipe posted early next week if not before.
Wondering why I'm doing green apples and green bananas? They have less sugar content, which is good! Not sure what I mean by a green banana? They are those bananas in the store that are all green and not very ripe. It is the only way I eat bananas. Once it starts getting more yellow then green it is to ripe for me! At that point I mash them up and thrown them in the freezer for baking.
My lunches this week will be leftovers or salads with lots of veggies.

I really try to avoid gluten if I can, but I'm not at 100% gluten free yet. I still love my pastries full of gluten every once in awhile :)
