Rainy Day Baking

This afternoon I baked some cookies for some friends that have been promised cookies since Christmas. It was rainy, so it was a perfect afternoon to stay inside and bake.


If these look good to you (Peanut Butter on the left, Snickerdoodle on the right) the recipes are below. If you don't feel like baking them yourself, they will be served in my coffeeshop and bakery (still working on the name...maybe Cream & Sugar???) once I find the time and money to open one! Sooooo...if anyone has any extra money laying around, you could send it my way!

Snickerdoodles
1/2 cup butter, softened
1/2 cup shortening, softened
1 1/2 cup sugar
2 eggs
2 3/4 cup flour
2 tsp. cream of tartar
1 tsp. baking soda
1/4 tsp. salt

Cream the butter, shortening, and sugar together. Add the eggs. In a separate bowl combine the remaining dry ingredients. Slowly add to creamed mixture until completely combined.

Mix together 4 Tspb. Sugar and 4 tsp. cinnamon.

Form dough into balls and roll in cinnamon sugar mixture. Bake at 400 degrees for 8-10 minutes.

Taken directly from the Better Homes and Garden Cookbook. If you don't have this cookbook in your collection, I highly recommend it. Besides tons of recipes, it has some great cooking tips mixed throughout the cookbook.
