What are you eating for Breakfast?

Brenden loves the frozen, processed, packaged breakfast foods such as Pancake & Sausage Mini's and Breakfast Sandwiches. These are not cheap to buy and you don't get much for what you spend. We began a tight budget several months ago (more on that in another post), so we do not have it in our budget to spend money on these frozen packaged foods. I have never liked buying those processed frozen meals anyway, so this has made it a great excuse for me to make those type of foods fresh at home!

Today I made Sausage & Cheese Sandwiches to freeze so Brenden has some sandwiches to eat during the week. Here is the process I took if you are interested in trying them yourself!

To start you want to take 1 lb. of Jimmy Dean Sausage (any flavor you like) and make 6 patties with it. You can use any brand sausage you prefer, this is just my preference.



Besides the sausage you also need cheese and English Muffins
**Updated 8/3/11--we no longer use American cheese (as pictured below) in our house, one of those baby steps we took to get closer to a whole foods diet.  Instead I use Cheddar cheese, pepper jack, or whatever cheese I happen to have at the time.  



Make sure you make the patties thin and larger than the English Muffin, as the patties will shrink in size when you cook them.



Cook the sausage patties in a skillet over medium heat. Press them with a spatula as they are cooking. This helps them not shrink up so much.



While the sausages are cooking cut apart the English Muffins and toast them. After they are toasted lay out on a cooling rack so they can cool completely.



When the sausage is completely cooked, place on a paper towel to soak up the excess grease. I also pat the top of the sausages with a paper towel.



It is very important that you let the sausages and muffins cool completely before assembling the sandwiches.

To assemble the sandwiches take one slice of cheese and quarter it. Place two of the quarters on one of the muffins. Place a sausage patty on the cheese and then put the other two cheese quarters on the top of the sausage. Place the other side of the muffin on top.







Once all of the sandwiches are put together, wrap each of them in foil. Place all the foil wrapped sandwiches in a Ziploc freezer bag.



Pull a sandwich out the night before and place it in the refrigerator. The next morning warm it up in the microwave and enjoy!

The options are limitless when it comes to what to put on your sandwich. (Eggs, Bacon, Ham, etc.)

This is a much healthier and budget friendly option than frozen or drive-thru breakfast sandwiches.

  1. We love pancakes and waffles. So whenever we make them, we always make a triple batch and freeze the leftovers. Just microwave for a few seconds to get the chill off and then stick them in the toaster. Really good!

  2. Great Post! I have some sausage and I didn't know what to do with it, but now I do! :)

    I love to make breakfast burritos (tortilla, scrambled eggs, cheese, etc...) cook it all, put it in the tortilla and wrap in foil and freeze them. Warm them up for any meal and they are awesoome! :)

    We eat cereal or yogurt. I do freeze homemade fruit/oat combos for Wilder. They are easy to warm up with a bit of formula/rice cereal added. More economical, too.
