Menu Plan Monday 7.2.12





I only have 2 days left on the 30 Day Get Fit Challenge. It was nice to not have to plan a menu this week with all the restrictions! No worries, the menu is still healthy.  Tuesday we are going to Freedom Fest here on post so for dinner we are splurging and eating "fair" food. I'm not so excited about eating food at the event, I can never find fruits & veggies at events like these! Maybe I should start a fruit & veggie truck trend at fairs, not sure if that would succeed! B is SUPER excited for the unhealthy fried foods.

I am continuing the protien shake for my breakfast and lunch this month, so I'm just going to share what I am eating for dinner. B's schedule for the next few weeks does not allow him to be home for dinner, so I get to eat dinners that B does not like!  Here is what I am having for dinner this week (well B gets to eat with me on Tuesday and Wednesday nights).

Monday: Spaghetti using Rice Noodles & Marinara. Steamed Broccoli.  When we started eating gluten free I was very impressed with the rice  noodles on the market.  The only difference is they are stickier then wheat noodles.  I encourage you to try gluten free noodles!
  
Tuesday: Freedom Fest junk food. Ugh.  

Wednesday: Grilled Hamburgers, New Potato Dill Salad, Cucumber & Tomato Salad, Watermelon & Pineapple.  I will post salad recipes next week.


Thursday: Summer Squash & Corn Chowder (Yahoo, I can have dairy products again!)

Friday: Leftovers

Saturday: BBQ Chicken, leftover salads & fruit  

Sunday: Tacos. Fruit. Carrots & Cucumbers.  I make my own taco seasoning, so I will post this recipe next week also!
