Menu Plan Monday 7.9.12

It is that time again--menu planning and grocery store! I HATE going to the grocery store, but I guess it must be done if I want to eat.


I usually just plan my menu a week at a time because B's schedule changes all the time.  This week he is working late again so I'm on my own for dinners. You know what that means? I get to eat things he doesn't like. Dinners with veggies and onions are the greatest! 


I write down our meals for breakfast, lunch, and dinner but I have been tempted to do it all electronically. Since I'm on my computer so much I haven't switched to an electronic format because it is nice to have it written down and hanging on the fridge. Here is what we are I'm having this week--

Breakfasts and lunches I will have my protein smoothies.  I will have healthy snacks in the morning and afternoon.  Here are some snack options:  green apples, strawberries, carrots, broccoli, cauliflower, and protein balls (recipe to follow in the next week or so). What are your favorite snacks to eat during the day?

Monday: Summer Squash & Corn Chowder (I had this on the menu last week but did not end up making it).

Tuesday: Leftovers. Busy day so don't want to take time to make dinner!

Wednesday: Spaghetti & Meat Sauce (using rice pasta so it is gluten free). Fruit and Veggies.

Thursday: Black Bean Soup. Fruit and Veggies.


Friday: Leftovers because who likes to cook on Friday nights?  Not me!

Saturday: Sloppy Joes (Gluten Free Buns).  Fruits and Veggies.

Sunday: Tacos (Gluten Free Tortillas) with homemade salsa using tomatoes from the garden and homemade guacamole. Fruit.

  1. I've never made a menu, but I don't really cook; however, your menu items look simple and easy. Especially sloppy joes...one of my fave's!

    1. I always try to keep my menu simple. I love to cook but I am busy all day so quick and easy meals are the way to go! Did you try the sloppy joes. Hope you liked them!
