Sloppy Joes Recipe & Gluten Free Menu Plan

I spent several hours on Saturday planning all meals for January. I have never planned more then a week at a time,  so this is a first for me!  It is nice to know all I have to do for the next few weekends is make a grocery list and shop from my already planned menu.  Before I share this week's menu, I want to share my Sloppy Joe recipe.  

I grew up eating my dads sloppy joe recipe, never really realizing that you could buy it in a can.  I would always ask B if he would eat sloppy joes and he always would say no.  Well one day I really wanted them so I whipped up a batch in hopes B might actually eat them.  Success!  He loved them and told me that it is one of his favorite things I make.  

As most of you probably already know, I never find a recipe and make it 100% as written. I always have to put my own twist on the recipe.  So here is my Sloppy Joe recipe.
Sloppy Joes

Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1 pound ground beef
  • 1/8- 1/4 cup brown sugar
  • 2 teaspoons to 1 tablespoon McCormick Montreal Seasoning (or any steak seasoning blend)
  • 1 tsp. Onion Powder
  • 1 tsp. Garlic Powder
  • 1 tablespoon red wine vinegar
  • 1 tablespoon Worcestershire sauce
  • 2 cups tomato sauce
  • 2 tablespoons tomato paste
  • Gluten Free Buns
  • Garnish: sliced ripe tomatoes, pickles, pickles, olives

Directions

Heat a large skillet over medium high heat. Add oil and meat to the pan. Spread the meat around the pan and begin to break it up. Once browned, add brown sugar, steak seasoning, garlic powder, and onion powder.  I usually start with 1/8 cup brown sugar then add some after it simmered if it needs to be a little sweeter.  Let cook for 1-2 minutes.  Add Red Wine Vinegar, Worcestershire sauce, tomato sauce, and tomato paste.  Reduce heat to medium and cook for 5-10 minutes until a little thickened.  
Using a large spoon,  pile sloppy meat onto buns. Serve with your favorite sides!

Saturday: Sloppy Joes on GF buns, pickles, black olives
Sunday: Tacos with GF tortillas with all the fixings
Monday: Black Bean Soup, Salad, Apple. 
Tuesday: Hobos. Salad. Apple
Wednesday: BBQ chicken. Brown rice.  Salad. Fruit
Thursday: Crock-pot White Chili. Salad, Apple. 
Friday: Jamaican Jerk Rub Grilled Chicken. Salad. Apple

I almost forgot that I was going to share with you my eating plan for the next 90+ days.  This last summer I did a 30 day Arbonne Get Fit program and lost a great amount of inches and pounds! The program focuses on eating clean and the results are amazing, both in weight and how I feel.  You can read more about the plan and my results here.  

I was so excited at the end of 30 days, then life happened and got super busy and I started back in my old habits.  I started eating gluten, dairy, coffee more often and we ate out way too much.  

So today I started on my eating plan.  Here are my eating guidelines for the next 90+ days: 
  • No Gluten 
  • No Dairy 
  • No Caffeine
  • No Sugar
  • No Coffee
  • No Soy
  • No Processed foods
  • Lots of veggies, fruits, water, and real food.  

We have been eating real/whole foods for at least 5 years, so most of this plan will be second nature.  Although cutting gluten, dairy, and coffee out is tough.  Gluten, dairy, and coffee gives me issues.  I have always been allergic to dairy, but usually can control my intake and be fine, I thought.  I realized after my first 30 days with no gluten that when I do eat it I get tired, grouchy, bloated, and a sickly stomach.  Coffee is my kryptonite, we have a love/hate relationship.   

After my 30 days of eating on the plan, I felt great.  My mood was better, my skin glowed and was cleared up from eczema, I'd lost weight (yahoo!), and just felt healthy.  

I'm looking forward to how I feel after 60 and 90 days on this eating plan, at least after I get through he first week of detox!
